    We designed TCHOPro with today’s professional in mind: a chocolate with TCHO’s characteristic flavor obsession that performs to the highest technical standards — and, at the same time, delivers a compelling value proposition.

    Because we directly source our own cacao beans and form relationships with growers, we control every step of the development process – in other words, everything that impacts final flavor and functionality – from bean fermentation and drying at source, to roasting, formulation, refining, and blending.

    We sampled cacao beans from all over the world before finding four spectacular sources (in South America and Africa) that would work beautifully together to create our TCHOPro couvertures. Our scientific approach to bean fermentation and roasting makes for a rounder, more complex chocolate that is not bitter — by design.

    And our innovative development process — which included innumerable test batches, surveys, and then multiple rounds of performance evaluation by the best chefs and chocolatiers in San Francisco and across the country — yielded a technical chocolate that is bursting with flavor, yet performs to exacting technical specifications.
