Rated 5 out of 5 by from Tasty I snack on this. Bold classic cocoa taste (not fruity or floral). It was delicious in mocha ice cream. I haven't made any confections with it yet, but I think it would make for some good truffles. I'm not an expert, but I've cooked plenty with the leading professional chocolate brands and eaten a variety of quality chocolate.

 Are these chocolate critters considered raw? How are they made? Meaning do you use any high heat and such that would denature the nutritional value of raw cacao?

Hello Lisa, Thank you for your question, we are glad you asked. Our 99% are not considered raw since our cacao beans go through a light roasting process to bring out the best, natural flavors of the cacao. Once the beans have been roasted, they go through a grinding process to smooth out the texture, with no added sugar. The nutritional value of the cacao is still a high percentage due to the light temperature during the roasting process. The purpose of roasting the cacao is to highlight and enhance the true chocolate flavor (similar to lightly roasted coffee). Also, the roasting process helps ensure that our chocolate is free of pathogens that can often be found in raw cacao. We hope this helps answer your question, many thanks for reaching out!

OK, so what is the other 1%?

Hello, We use 100% liquor in the recipe but I the 1% left refers to the fact there can be sugar residue in the system. We do not add any additional sugar. Thank you! TCHO Customer Service
