"The Rookie" Confectioner
Ryan is a true chocolate nerd. From birth Ryan dreamed about a life in chocolate. And, from birth, his fate was to land at TCHO. He grew up in a small farm in Montana, learning the importance of ethical sourcing. Ryan went on to study baking and pastry at CIA Hyde Park and become a production baker and pastry cook at CIA San Antonio (The CIA where students whip out spatulas and whisks. If it was the other CIA, we wouldn’t be allowed to mention it…) In his free time, Ryan studies other forms of fermentation like brewing beer and baking bread. Ryan’s even so connected to chocolate he has a tattoo tribute to cacao. He loves constantly being surrounded by cocoa nerds, working in place that changes the way the world looks at cacao, and pondering over the potential for a literal death by chocolate.
